The salt helps the chicken to retain the moistuer it would otherise have lost. We've brined chicken, turkey and sometimes a pork shoulder.

We have a charcoal filter built into our refrigerator that has ice and water on the front. I hate when my wife goes and buys bottled water when she thinks it better. I can at least use the empty bottles at the gym when I work out. Nothing is as good as the water fountain there.

My tip for cleaning the grates.....I usually do this before AND after I cook. Get a pretty good sized sheet of aluminum foil, lightly wad it up and use a long set of tongs to scrape the wad over your grates. Since it's wadded up lightly, it will contour to the rounded edges of the grates much easier...

I've been planning on smoking another butt for New Years, no matter how cold it is. I always enjoy BBQ'ing in the winter, it helps keep the beer cold.

Grind up an asprin and mix a few drops of water to it to form a paste. Put that on the offending problem. The asprin will help reduce any swelling and inflamation and will also ease the pain.
