I was checking out Chow today and saw that they had this video which I think might be of interest to some of you knife fans, ergo the thread:
Obsessives: Knives
BY MEREDITH ARTHUR AND ERIC SLATKIN
Joel Bukiewicz loves grinding steel. He’s the man behind Cut Brooklyn, making high-end knives to order for chefs and home cooks. Bukiewicz found that honing metal was more satisfying than honing his novel, but as with many writers and their characters, Bukiewicz remembers details about every knife he’s made. The video takes you through the knife-making process and addresses common questions, like how many knives do you need, what’s up with Santokus, and what is the best knife to own.
Thanks for jogging my memory about this website; I couldn't remember it's name after hearing about it before. Great story about the author/knifemaker. He favors the Japanese-style cutaway bolsters, which I don't, but his understanding of what makes good cutlery is massive. As are his prices. But I love this stuff, nonetheless. Appreciated.
