I really like the look of those knives, Janus, and the fact that they are carbon steel makes them very compelling.

At least I already have the Sabatier knives I wanted in carbon steel.

A couple of days ago I decided to sharpen my kitchen knives. I used a DMT D8C (coarse) and the results are some wicked edges. This experience seems like eating a piece of cake (or pie) as opposed to laboring to maintain a straight razor's edge. Makes me think I've been overlooking something when I set out to sharpen the straights. I've got the equipment and I think I should be able to figure out a different way of sharpening razors.

Me too. A great piece of kit. Although I have, and know how to use, a wet stone, I much prefer this. Call me lazy, but it works very well.

That's what we use too FW' . Once you get the edge converted over to the 15° angle it's a walk in the park.

I love the thing. Our knives have never been sharper and I thought I was doing good with sharpening by hand. But now they are much sharper.

I watch cooking shows and when I see a chef abusing the edge of a knife by scraping the edge across a cutting board I mention to the wife that I'd never let that (deleted) anywhere near my knives. It's easy enough to flip the knife over for that use.
