Use a straight. You know it makes sense.

Another idea for minimizing burs is to not form one. By definition burring occurs subsequent to bevel intersection. So in theory you could hone until you are one stroke away from forming the intersection and then stop there. Sounds difficult to me, but I know knife sharpeners that say they do this with knives.

More thoughts:

In the latter stages of honing you do two things. One, you are polishing out the grind pattern left by the coarse hones. Two, you are using optimum pressure and honing patterns so as to leave a uniform edge with minimal burring.

I think the latter is more important than the former. The edge can shave well even though it is not mirror polished. I say this because in my limited experience, a mirror polished edge doesn't guarantee shave ability.
