Yes, steam definitely makes for a better crust.
Recipe PMed dosco. Those loaves don't use steam. If you try steam, let me know if you notice a difference.

Yes, there is much in common with brewing. Of course diastatic malt can be purchased, but I prefer to make my own. It's a requirement for beer making, but works great for bread making as well. So far I've made it from both soft white wheat and rye. I have no idea if diastatic malted rye is even available for purchase. Malted rye isn't the easiest thing to make; not difficult, just not easy. I find a small addition of diastatic malt makes my bread better since it converts starch to sugar. You'll see it in the recipe.
