Buffalo Style Baked Drumsticks

Every once in a while our supermarket puts the family sized packages of chicken drumsticks or thighs on sale for a dollar a pound. The other day I bought a package of drumsticks. There were 14 in the package and the cost was about 3 bucks.

In a large plastic bag put about a cup of flour, a tablespoon of salt, a teaspoon of cayenne pepper and a tablespoon of garlic powder. Shake the bag well to mix the ingredients.

Place racks on a cookie sheet so the grease can drain while cooking. Spray the sheet and racks with PAM.

Dredge the drumsticks in the flour mixture and arrange on the racks. Put them in the fridge for at least an hour to let the coating set up. This step is important.

Preheat your oven to 400 degrees. Bake the drumsticks for 45 minutes. Turn them over so that the other side can brown and bake for another 45 minutes. About 5 minutes before they are done, melt 1/2 stick of butter over low heat and add 1/2 jar of wing sauce of your choice. I use Louisiana brand wing sauce. Coat the drumsticks with the sauce and return to the racks. Bake a final 10-15 minutes to let the sauce soak in to the meat.

These are very tasty. The chicken is tender and not overcooked. Its a good recipe for when you don't feel like firing up the grill or smoker.
