I believe this is a Polish dish. This is my daughter's recipe:
4 dried mushrooms
1/4 cup of water
2 lb sauerkraut
1 large Apple, peeled, cored, sliced
1 (20 oz) can tomatoes
5 peppercorns
1 bay leaf
2 cups diced Polish sausage or leftover meat
1 cup coarsely chopped bacon
Steamed potatoes and/or rye bread
- Soak mushrooms in the 1/4 cup water for 2 hours. Bring to boil and simmer for 1/2 hour. Slice.
- Wash sauerkraut and squeeze it. Combine with mushrooms and the liquid in which cooked. Add apples, tomatoes, peppercorns and bay leaf. Cover and simmer for 1 1/4 hours.
- Add meat and bacon; simmer for 1 hour longer.
Serve with steamed potatoes and/or rye bread. As with most stews, it is better re-heated.
