GA Russell, you may want to consider Mauviel steel frying pans instead of cast iron. You season and maintain them in the same way but they are lighter in weight. They are not cheaper than cast iron from what I've seen but still very affordable.

I am considering one of their larger frying pans as a backup to my All-Clad but maintenance is an issue (because of time). If I get one I'll let you know how I like it.

Matfer Bourgeot (sp?) also has "black steel" pans and they are top rated by ATK, they are priced really good as well. I've been using them for a few years now after CI and I'll never go back to CI.

Clive, with the enamel on the interior as well, does that mean you wash it with soap and water like you would any other pot?

I wash mine with soap and water as I would with stainless steel. Some of y pots are 10+ years old and still in tip top shape
