One thing I enjoy immensely is a homemade vinaigrette.
I've been using the following for years:
1 clove or so of garlic minced
pinch of salt
1 1/2 tblspns white wine vinegar
1/2 tsp or so of dijon mustard
1/3 or so of extra virgin olive oil
Recently I've swapped out the garlic and white wine vinegar for 1 mined shallot and red wine vinegar and it is wonderful.
