Fascinating.

Personally I'd dig out the cork with a screw and then filter it as they do through a mesh and cheesecloth. The effect would be the same without any chance of glass shards being anywhere.

That is really interesting to see. I've seen badger hair brushes used quite frequently to clean woodwind instruments in repair shops.

Yes, the iron tongs are an old trick (in wine literature) but for something really dramatic:

Interesting that they use a shave brush for this rather than some other tool. I guess it's all about table side presentation and they couldn't come up with anything better like a dampened table napkin. Seems odd to me to break out a shaving brush in a fine dining establishment. Might as well go the whole 9 yards use a straight or kamisori to knock the top off :lol:
