Milk Buns

Quick rolls for homemade soup:

1 cup lukewarm milk
1 egg
1 TBSP oil
½ TBSP quick yeast
3 TBSP sugar

2¼ cups white bread flour
½ tsp salt

Mix first five ingredients in a bowl, and mix salt and flour separately. When both mixed, add the flour/salt to the liquids in the bowl and mix till a dough forms. Once it's a ball, cover and leave in a warm spot to rise to triple volume (1-2 hours). Take out of bowl and on floured surface cut into nine equal pieces. Fold and tuck into balls and roll between hands, place in 9x9 pan, cover and leave an hour to rise. Repeat the fold and tuck and cover to rise for a third time. Bake in preheated 350ºF oven for 14 minutes, cover with foil and bake 8 minutes more. Take the foil off and assess for browning. Depending on your oven you might want 2-3 minutes more with no foil to give them a brown and sl. crispy top. Cool on rack.

Chris, it is unseasonably hot where I live, but those buns do look good!
