Carrot Soup

There are no end of variations of carrot soup, but this one is easy and tasty.

Chop a medium size onion quite small and fry in a 2 TBSP oil. Add 1 tsp curry powder and keep stirring till onion is translucent.
Finely slice carrots (1-2lb, this is forgiving!) and add to the pan. Stir to coat carrots in onion/curry flavour and leave to cook for ten minutes stirring now and then. Add 1 pint vegetable stock and leave to simmer for 45 minutes. Once carrots are soft pass through a blender in portions and add to a new saucepan. Depending on the stock used you might need to add salt, or you may not. Use your tastebuds! I also added 1tsp paprika and a 1/2 tsp ground coriander.
When ready to serve, to make it interesting, I sprinkled with Spanish smoked paprika, added a dollop of natural yogurt and a sprig of cilantro. Very enjoyable!

Sounds good. This and its variations are tasty with some whole roasted cashews stirred in after the blending.
